Chest pains and worries over his weight sparked a remarkable wellness journey for a man from Rhode Island that he claims saved his life. The unexpected catalyst for this transformation? A Chick-fil-A salad.

Tom Carroll, a 32-year-old digital content producer from Lincoln, Rhode Island, stated that he realized he needed to make a dramatic change following a severe episode of chest pain during Thanksgiving 2023.

At that point, Carroll weighed 360 pounds and had previously struggled to alter his diet and lifestyle. However, the experience during Thanksgiving forced him to confront the seriousness of his health.

“I knew that this was a moment where I could not ignore my health any longer,” Carroll acknowledged.

After several days, Carroll’s wife, Morgan, offered to pick up dinner from Chick-fil-A. To her surprise, he requested a Spicy Southwest Salad, a choice that would propel him on a new path toward healthy living.

“What she didn’t know was that I had silently vowed to start my health journey,” Carroll explained. “I hadn’t shared my chest pain or my weight loss goals with anyone, which I now regret. I simply asked her to bring me a salad.”

The first bite changed everything for him.

“This salad was absolutely delicious,” he recalled. “I’ve always enjoyed spicy flavors and I love Mexican cuisine. It incorporates all those elements.”

The Spicy Southwest Salad comprises grilled spicy chicken breast on a bed of mixed greens, complemented by tomatoes, cheese, roasted corn, black beans, and peppers, all dressed with a creamy salsa dressing. With 680 calories, 49 grams of fat, 27 grams of carbohydrates, and 33 grams of protein, this meal became a staple in his diet.

“I thought, if I could eat this salad every single day, I wouldn’t get bored,” Carroll mentioned.

Since there was no Chick-fil-A in Lincoln, he began the daily four-mile journey to the nearest outlet in Attleboro, Massachusetts. Acknowledging that Chick-fil-A closes on Sundays, he made a habit of picking up an extra salad on Saturdays to keep his routine in check.

Alongside this commitment to healthier eating, Carroll opted to eliminate alcohol from his weekdays. He initially thought he could manage drinking only on weekends but soon realized that alcohol led him to poor food choices.

Despite his dedication, Carroll hesitated to gauge his weight loss progress. It was not until one fateful night when he lapsed in his diet and consumed an entire pizza while watching football that he recognized the gravity of his situation. The discomfort returned, reminding him of the chest pains he had tried to escape.

“After that episode, I felt persistent discomfort,” he remarked.

Waking up his wife, he asked her to drive him to the emergency room. In a moment of introspection, he decided to step on the scale, motivated by a video he had seen about the importance of knowing your weight when visiting a hospital.

“I stepped onto the scale,” he recalled. “I was shocked to see that I had lost over 60 pounds.”

That realization brought elation, as he transitioned from fearing for his life to celebrating significant weight loss due to his daily salads.

During his time in the ER, Carroll noticed patients in worse health conditions and, upon discovering he was not experiencing a heart attack, his resolve to improve his health intensified.

Taking control of his situation, he scheduled a doctor’s appointment, joined a gym, and continued eating his daily salads. Eventually, he began crafting his homemade version to incorporate into his dinners.

Undoubtedly, Carroll attributes a considerable part of his weight loss success to the Chick-fil-A staff, who were among the first to know about his health goals.

“They served as my support system,” he said, expressing gratitude. “I referred to them as my biggest cheerleaders.”

Creating a no-judgment zone, he felt comfortable sharing his weight loss journey with the employees, knowing they would encourage him regardless of his progress.

Kelly Springer, a registered dietitian based in Skaneateles, New York, assessed Carroll’s choice and noted that he was receiving adequate protein, vegetables, vital nutrients, and keeping a close eye on his caloric intake.

She elaborated, “With consistent choices like his, gradual change over time is attainable.”

While she typically advocates for a broader variety of fruits and vegetables to enhance gut health, Springer recognized the importance of Carroll reaching a weight range that mitigates his risk of chronic diseases.

Now weighing 228 pounds, Carroll proudly shares he has lost 132 pounds and has effectively entered what he describes as “maintenance mode.”

“I’ve maintained my weight by enjoying my salads daily, preparing homemade salads for dinner, and eating a light breakfast while committing to workout sessions at the gym almost every day,” he explained.

Chick-fil-A representatives did not provide any comments regarding Carroll’s inspiring story.
